Lemon-Garlic Shrimp

Who doesn't enjoy dishes that are easy to prepare with few ingredients and little prep time, and this dish is no exception.  Serve this dish over a wild rice or couscous, add in your favorite green vegetable, and you will have a quick, low calorie meal that all will enjoy!

1 Teaspoon Lemon Peel, grated
2 Tablespoons Lemon Juice
2 Teaspoons Olive Oil
5 Medium Garlic Cloves, minced
1/2 Teaspoon Italian Seasoning
1 Pound Shrimp, shelled, deveined
1/3 Cup Fat-Free Chicken Broth
1 1/2 Teaspoons Cornstarch
1/4 Cup Green Onion, sliced


 

 

 

 

 

 

 

In a medium bowl, combine lemon peel, lemon juice, olive oil, garlic and Italian seasoning; mix well.  Add shrimp; toss to coat. Let stand at room temperature 15 minutes to marinate.  In a measuring cup, combine broth and cornstarch; blend well.  Stir into shrimp mixture; add onions.  Heat large nonstick skillet over medium-high heat until hot.  Add shrimp mixture.  Cook and stir until shrimp turn pink, 2 to 4 minutes.
