California Quesadillas
Don't want to pay the high prices to get yourself out to California? Bring a little bit of California to your dinner table with this healthy quesadilla recipe. It is an interesting and delicious option to the traditional ingredients. Who would have thought putting an orange slice into a quesadilla would work well with cheese, but it does. If you are looking for a little more protein in this recipe, including a few strips of chicken breast or thin pork will not change the taste. If you are totally adverse or cannot find fat-free ingredients, use a low-fat variety, or much less of the real stuff. Enjoy!
Vegetable cooking spray
4 Fat-Free Tortillas
6 ounces Fat-Free Cheese, mild, shreded
1/4 cup Green Onion, chopped
1 cup Alfalfa Sprouts, shredded
1 large Orange, peeled and sliced
4 ounces Chiles, drained, cut into strips
Guacamole, optional
Fat Free Sour Cream, optional
Spray large skillet or griddle with cooking spray. Place over medium-high heat until hot. For each quesadilla, place tortilla in hot skillet until lightly browned on one side. Turn; sprinkle with 1/4 of the cheese, chilies, green onions and alfalfa sprouts. Heat until cheese melts; top with 1/4 of the orange slices. Fold tortilla in half. To serve, cut into wedges. Garnish with guacamole and sour cream.
